Carrot Ginger Broth

3 large carrots
2 oz. fresh ginger bulb
4 oz. unsalted butter
4 oz. dry white wine
Salt/pepper

Juice the carrots and ginger bulb. Place in a sauce pan with the white wine and reduce by half. Whisk in the butter and season to taste. This broth may be used for chicken, seafood or even beef.
