Grilled Oysters and Red Oyster Sauce

4 dozen oysters

Wash and scrub oysters in cold water to remove sand. Heat the grill until very hot. Place the oysters on the grill, shucking them first is optional. When the shells open, after about 3 minutes, use an oyster knife to detach the oysters from the top shells. Loosen the top shells and discard before serving.

Red oyster sauce:
¼ cup unsalted butter
½ cup olive oil
1 large clove garlic, minced
¼ cup sundried tomato paste
¼ tsp. Thai red curry paste
10 leaves fresh basil

Melt butter in medium saucepan over medium-low heat. Add remaining ingredients, except basil, and simmer until butter is brown (about 15 minutes). Roughly chop basil and add to sauce.
